Here is the recipe for Chinese cold chilled noodles from Chef Kenny Lin. Enjoy!
Ingredients
- Noodles (I prefer Chinese Shandong Ramen medium)
- Shredded carrots
- Bean sprouts
- Green Onions (cut thin)
- Cucumbers (cut thin)
- Creamy Peanut Butter (4-6 tablespoons)
- Soy Sauce (2 tablespoons)
- Vinegar (1 tablespoon)
- Water (1 cup)
Directions
- Cook the noodles to your preferred degree of tenderness
- Rinse the noodles with cold water in a colander to dry
- Put noodles on a plate, add a teaspoon of vegetable/olive oil to chill in the refrigerator
- Add your favorite shredded vegetables on top of your chilled noodles
- Mix your peanut butter, soy sauce, vinegar, and water and blend them until thick
- If you like spicy hot, add some
