Chinese Cold Noodles

Here is the recipe for Chinese cold chilled noodles from Chef Kenny Lin. Enjoy!

Ingredients

  • Noodles (I prefer Chinese Shandong Ramen medium)
  • Shredded carrots
  • Bean sprouts
  • Green Onions (cut thin)
  • Cucumbers (cut thin)
  • Creamy Peanut Butter (4-6 tablespoons)
  • Soy Sauce (2 tablespoons)
  • Vinegar (1 tablespoon)
  • Water (1 cup)

Directions

  1. Cook the noodles to your preferred degree of tenderness
  2. Rinse the noodles with cold water in a colander to dry
  3. Put noodles on a plate, add a teaspoon of vegetable/olive oil to chill in the refrigerator
  4. Add your favorite shredded vegetables on top of your chilled noodles
  5. Mix your peanut butter, soy sauce, vinegar, and water and blend them until thick
  6. If you like spicy hot, add some
